Balsamic Roasted Strawberries

These balsamic roasted strawberries are made with just 4 simple ingredients, and are the perfect addition to baked brie, cheesecake, etc.

Ingredients

  • 1 quart fresh strawberries about 2 ½-3 cups
  • 2 ½ tablespoons sugar or honey/maple syrup*
  • 2 tablespoons balsamic vinegar aged, good quality
  • teaspoon sea salt

Instructions

  • Preheat the oven to 375ºF (190ºC).
  • Prepare the strawberries by washing, drying, and removing the hulls. Leave smaller berries whole, but slice any large ones in half.
  • Place the prepared berries in a medium baking dish (7.5x10.5” or 9x9”) and sprinkle with sugar (or maple syrup/honey) and salt.
  • Drizzle in the balsamic vinegar, then stir to coat the strawberries in the sugar and balsamic vinegar.
  • Bake in the preheated oven for 30-35 minutes, stirring once during the baking time if possible. The strawberries are done when they are very soft and fragrant – don’t overcook them, as the sugar can burn.
  • Serve immediately if you’re using it as a baked brie topping, or cool and chill for several hours if you’re using it to top desserts or as a soft spread.

Notes

*Can I use maple syrup or honey? Yes! Granulated sugar gives a more neutral sweetness and was preferred in our testing. If you like a maple or honey flavor with strawberries, feel free to use that instead!

Balsamic Roasted Strawberries with Baked Brie: If you’re making this for a baked brie topping, I always recommend using a lower-fat brie. Triple cream brie is wasted when it is baked, and it does not hold its shape like lower-fat options. Double cream will work just fine, but budget brie or even Camembert are great options. Bake your brie in a baker (or shallow dish) at 350ºF for 20-30 minutes, or until the center easily depresses and the sides are bubbly (baking time greatly depends on the size of your wheel!). Spoon roasted strawberries on top and serve immediately with crostini or fresh bread slices.
